How We Bake

Freshwater Baking Co. carries a connection to Freshwater, a sun-drenched beach in Sydney. The rhythms of that coast and the pull of ocean winds echo here in Maine, shaping the laid-back essence of our bakehouse.

Our sourdough is crafted from regionally-sourced ingredients and inspired by the spirit of place—from Australia’s surf to Maine’s tides.

Your Baker, Nick Green

Nick began baking sourdough in his hometown of Sydney, Australia, over a decade ago. He came to the United States to deepen his baking craft at the Culinary Institute of America. After graduating, Nick headed west to Big Sky, Montana, where he explored the heritage of rustic Rocky Mountain fare and found seasonal inspiration rooted in the dramatic landscape.

Nick and his wife eventually relocated to Vermont and opened a home bakery, Fig & Fennel Bread Co., joyfully baking artisan sourdough for Montpelier and Stowe. In the Green Mountains, Nick cultivated a strong appreciation for place, prioritizing partnerships with local producers and regionally sourced, thoughtfully milled flour.

The ocean eventually called this Aussie to coastal Maine, where he and his wife found home. Here, they reimagined their bakery as Freshwater Baking Co.—an expression of place itself, crafted from the timeless, whole ingredients of sourdough: flour, water, salt.

Freshwater Baking Co. operates out of the Booker Creek Bakehouse, located at 141 Rossmore Road in Brunswick. The Bakehouse is closed to visitors but all are warmly welcome to enjoy freshly baked sourdough and more from a roadside stand each Saturday (10 am – sold out).
